Steps for Nuozizi bean paste roll

Main materials used: glutinous rice flour, starch, olive oil, white sugar, cooked black sesame seeds, white sesame seeds, matcha powder, coconut paste.

Place glutinous rice flour, starch, and sugar in a large bowl and stir well.

Add olive oil and appropriate amount of water and mix until it is sticky, the thickness of thick yogurt.

Steam in the steamer on high heat for 30 minutes, then turn off the heat and cool it thoroughly.

Take half of the steamed and cool glutinous rice dough, place it in a fresh-keeping bag, and roll it into slices of moderate thickness, about 0.5 cm thick.

Cut the rolled glutinous rice slices into two with scissors.

Cut off the top layer of fresh-keeping bag, squeeze the bean paste on one side of the glutinous rice slices, and so on.

Rub some olive oil on your hands, push gently with both hands, roll up the glutinous rice slices, and so on.

Take a rolled of bean paste roll and roll it back and forth on the sesame seeds a few times to make the sesame seeds evenly stick to the bean paste roll.

1. The steamed glutinous rice dough must be completely cooled before it can be placed in a plastic bag for rolling.
2. Place a layer of plastic wrap on the cutting board beforehand, then add sesame seeds, and finally place the rolled red bean paste roll on top to roll it around; this makes it easier to handle. (When I made this for the first time, I placed the rolled-out rice sheet directly on the board, and it all stuck to the board—a lesson learned the hard way.)
3. When cutting, dip the knife in cold boiled water, then slice. Dip it again after every few cuts; this prevents sticking.
