After washing the fish, put some salt on both sides and stomach of the fish and drizzle it with some cooking wine and marinate for 10 minutes.

Strain the marinated fish to dry, put some onions and shredded ginger in your belly, and pat dry cornflour on both sides of the fish. Pour the oil into the pan, heat it up, fry the fish on both sides until golden brown, and shovel it up for later use.

Mark a cross on the bottom of the tomato, let go of the water and blanch it for 1-2 minutes, pick it up when you see the curled edges of the skin, peel it and cut it into dices.

After heating the oil, add the diced tomatoes and fry until soft. Add salt, sugar and white vinegar. Crush the diced tomatoes with a shovel while frying. Then add water and turn to medium heat to boil the tomato soup. After thickening, add the fried fish and simmer until flavor.

After putting the fish on a plate, sprinkle with chopped green onion to decorate it (I forgot to buy the green onion and put in bean sprouts and leaves instead).
