Leeks have many nutritional values and contain a lot of calcium, phosphorus, carotene and vitamin C. It has the effect of replenishing and detoxifying needs. Eating more leeks can nourish the liver and enhance the qi of the spleen and stomach.

    Beat the eggs until frothy, chop the leeks and set aside.

    Put the oil in a small heat pan, add the leeks, stir-fry for one minute, and then add salt.

    Pour the eggs on the leeks. Do not use a shovel to scramble the eggs. Pick up the handle of the pan and shake gently to spread the eggs evenly on the leeks.
