Steps for Lobster with ginger and onion

1
1. Pour urine into the lobster first, chop a knife 1-inch above the tail of the lobster (shown in the picture), then pick up and drain the urine clean. It's amazing that urine really flows out. (This job is done by my husband, but I don't know how to do it)
2
Separate the lobster from head to tail.
3
Chop the tail in the middle and cut into 8 large pieces according to the shrimp shell.
4
Leave 1/3 of the shrimp head and the rest in half. Remove the shrimp brain, shrimp intestines and gills. (The dark green ones in the picture are shrimp seeds, and the slightly pale yellow ones are shrimp brains and intestines)
5
Use a hammer or the back of a knife to crack the shrimp tongs.
6
Slice ginger and cut green onions into sections for later use.
7
After the lobster is chopped, sprinkle with corn starch, and try to get each piece covered with a thin layer of powder.
8
Put oil in the pan and heat it up. (Take a chopstick and insert it into the oil. There are many bubbles coming up, which means that the oil temperature is high enough to fry)
9
Add the lobster in portions and oil it, about 7-8 medium cooked, the shell turns red, and the meat is a little white. Place the fried lobster and drain the oil.
10
Heat the oil pan again, add the ginger and scallion white to burst into the fragrance.
11
Add the lobster and stir fry for 2 minutes.
12
Use half a bowl of chicken soup to add salt, sugar and corn starch to make a marinade. Add the remaining green onions, add in the marinade and simmer for a few minutes.
