Personally, I think it's better to have something crunchy inside sushi. Usually cucumber is used, but inspired by lotus root and pork dumplings, I felt that lotus root paired with soft, chewy textures would taste better. You can use other vegetables or even fruit, depending on your personal preference. I like fish roe, so I added it at this step, lightly marinated in aged vinegar to remove the fishiness. Diced ham or sausage can be used as a substitute.
