Clean up the purchased wheat ear fish one by one (remove the gills, viscera, and scales) and wash it for later use.

Marinate. Use 8 grams of salt, 50 pieces of pepper, 2 pieces of aniseed, shredded ginger, dried peppers, and cooking wine. Marinate for several hours (preferably half a day to taste better).

Wash the marinated fish. It is best to wash all the ingredients inside, leaving only the marinated fish. Then add about 50 grams of corn flour and stir well. (Dip each fish evenly with cornmeal). Add a little chicken essence and a little salt to make the cornmeal easier to taste.

Put a little base oil in the pan, and wait until the oil is 50% hot, spread the wheat ears wrapped in cornmeal evenly in the pan. Don't use too much at a time, otherwise the fish will easily break. Fry one catty in about 2-3 times. Then change the heat to medium and low and fry it slowly. (Use chopsticks to gently flip the fish one by one to prevent the fish from breaking).
