Heat the oil in the pan, add the raw chicken pieces and stir fry over medium heat.

After frying until the chicken nuggets change color, add ginger slices, and continue to stir fry until the chicken nuggets tighten. Cook in cooking wine and stir-fry until the alcohol dissipates.
