Steps for Simple pizza
1
Stir everything except butter and salt until a rough dough is made2
Add butter and mix until dough is smooth (5 - 6 gluten)3
Add salt and beat until the gluten is above 9 points, and let let it relax for 15 minutes to allow the gluten to relax and ferment for the first time4
Add the mixture, 100g/piece, knead it smoothly (the main purpose is to exhaust air, knead until the surface is smooth and elastic), and let it rest for 15 minutes again5
After the gluten is relaxed, roll it out, and soak in a wakeup box for 90 minutes
6
After the glue is relaxed, roll it out, and soak in a wakeup box for 90 minutes7
Put it in the oven and bake it for 5 minutes, apply a layer of ketchup after the skin is peeled, then spread on the mixed vegetable salad, and bake it at 200/190 for 15-20 minutes. It will be OK!Simple pizza Make Tips
1. Add the water in batches; never add too much at once.
2. Don't add the salt too early; if kneading by hand, adding salt first will double the kneading time.
3. If you don't have a proofing box, find a warm and humid environment, such as a steamer with warm water...
4. Salad dressing + assorted vegetables + salt + sugar + pepper! It is best to mix and arrange immediately when preparing, otherwise it will release water.
5. If using carrots, blanch them until they are 80% cooked, otherwise the carotene won't be absorbed by the body.
6. Finally, one last thing: I forgot to take pictures of the previous steps.
