Many people believe that the longer soup is simmered, the more flavorful and nutritious it becomes. In reality, however, regardless of the temperature, the calcium within the bones cannot be dissolved because the calcium in animal bones is not easily broken down. Prolonged boiling can actually destroy the proteins in the bones; therefore, bone soup should not be cooked for too long. From a nutritional perspective, adding an appropriate amount of vinegar after the water reaches a boil is beneficial, as vinegar helps the phosphorus and calcium in the bones dissolve into the soup. At the same time, do not add salt too early, as salt causes the moisture in the meat to escape quickly and accelerates protein coagulation, which affects the flavor of the soup.
