Steps for Doujiao braised noodles

1
Ingredients needed: pork (both fat and lean), beans, noodles (either buy finished products or roll them yourself), onions, ginger, red and dried peppers. Arrange them into the shape shown in the picture:
2
Put a little bit of peanut oil in the pan, add fat meat to make the oil come out, and after the oil is removed, add a proper amount of peanut oil (not too dry, otherwise it will affect the taste), which should be twice as much oil as the usual cooking oil. When it is 70% hot, add dried red peppers, ginger, and onion and stir-fry until fragrant. Add lean meat to change color.
3
Add soy sauce to color, five-spice powder and salt in turn to taste. Stir fry for half a minute, add the beans and continue to stir for about one minute. Shake the noodles on the dish (the reason for shaking is to prevent the noodles from getting twisted together in the pan)
4
Add water to cover the beans and cover the pan for 15 minutes. Because each person uses different heat to prevent the water in the pot from drying out, don't let it go to its own fate. You have to always observe the situation of the pot during the 15 minutes. For example, I added water twice this time and flipped the noodles. So it turned into the third picture below. Hehe.
5
After 15 minutes, hold the super invincible Ruyi shovel in your left hand and the retractable diamond chopsticks in your right hand. Keep your eyes open and ears open, and quickly shake the noodles in the pot to loosen them. Stir well with beans. Try the salt again at this time and make a fine adjustment.Doujiao braised noodles Make Tips
1. It's best to use handmade wide flat noodles for a better texture (of course, this is just a personal preference).
2. For those who don't eat fatty meat, please skip the fat during the first step.
