pizza sauce
By HazelRohan
I have always wanted to learn to make Pizza, but I have to learn to make pizza sauce first. I have read Junzhi's recipe. It's really good. I occasionally changed it a little, which is to halve the amount of new fish and tomatoes and add tomato sauce. In this way, it will feel more "sauce" and don't need too much moisture. Sigh, I can learn and change it while cooking. Regardless of whether it is authentic or not, it's delicious, and it's important for my family and myself to like it.

Steps for pizza sauce

1
Preparation: Wash the tomatoes and cut them into diced pieces for use; cut onions into diced pieces, beat the garlic and cut into minced garlic for use.
2
Heat the pan, add butter and let it melt.
3
After the butter melts, add chopped onions and minced garlic (minced), and stir fry for about 1 minute.
4
After the garlic and onions are stir-fried, add the tomatoes and ketchup, and stir fry over high heat.
5
At this time, the tomatoes will produce a little water, then pour in basil, oregano, black pepper noodles, sugar, and toss well.
6
Cover the lid and simmer over low heat for about 15-20 minutes, but open the lid from time to time during the simmering process to see if there is a paste bottom. If the water is almost dry, turn off the heat. If there is still much water, simmer again. For a while, then collect the juice over high heat, add salt, and stir evenly to serve the pan.

After making it, use a dense jar or box, wait until it cools and place it in the refrigerator. With this sauce, you can also make Spaghetti or Macaroni. After practice, it tastes really great. The book says that it will be left for about 3 days, but I think if it is handled well and the refrigerator will be frozen enough, it will not be a problem for 4-5 days, but you must pay attention to observe whether there is any deterioration before eating.
