Wholemeal cereal bread
This time, I found a recipe for making bread with whole wheat flour and oatmeal from Teacher Meng's book. It uses the Chinese seed method. I used to try the direct method and the soup seed method before, but now I try the Chinese seed method and learn to make it for the first time. I have halved the amount of the recipe. I am afraid that if it fails, it will not be a waste.

Steps for Wholemeal cereal bread

1. Hair dough 1. First heat the water until it feels warm, then add the yeast, stir evenly, and then add the flour. Stir on a slow speed until it is formed. Put it in a container, cover it with a film, and keep it in a warm environment. Carry out basic fermentation for 2 hours;2. Mix all the fermented dough from Method (1) with the material B, and then stir at medium speed to form a more malleable dough;3. Add unsalted cream and continue to stir at medium speed to form malleable dough. Pull out the film. 4. Place the dough into a container, cover with plastic wrap, and ferment for a second time in a warm environment for 50 minutes. 5. After fermentation, divide the dough into 3 equal parts (this time it is a small test), round, cover with plastic wrap and relax for 10 minutes.

Baking: 1. Place a basin in the lower layer of the oven and put about a cup of water. 2. Put the dough into the middle layer of a heated oven at 300F for about 20 minutes.
