Spicy pettitoes

Every time I buy pig's trotters, I will go to the vegetable market to make reservations first. I will order pig's front hoof with the tendons that have not been removed. My son likes them, so it's okay to make them more expensive.

Steps for Spicy pettitoes

Chop the pig's front hoof into pieces and wash it.

Put cold water into the pan to remove the fishy smell of ginger, pepper and cooking wine.

Look at the blood and dirt all boiled out.

Remove it and rinse it with water and twist the pig hair clean with a twist.

Add a little oil in the pan and add rock sugar to boil the sugar color.

Don't boil it over low heat. It will be bitter.

Pour in the trotters and stir fry.

Take a look at the colored pig's trotters that don't have the same color as the soy sauce.

Give the red pepper, pepper, star anise, cinnamon, ginger, garlic and fragrant leaves (I was lazy and didn't take out the pig's trotters).

Add appropriate amount of water to boil (you can put it in a pressure cooker).

I just simmered it on the stove for almost two hours.

Season with the salt and collect the juice over high heat and give a little pepper.
