Steps for sweet and sour pork ribs
1
Chop the pork ribs into 5cm long sections (can be completed by the meat stall staff), put them in boiling water and blanch the ribs. Add cooking wine, soy sauce, ginger and onion flavor for 20 minutes. Put the pork ribs on the pan and steam them crispy (about 30-40 minutes).2
Pick out the steamed pork ribs for later use. Remove the broth. Pour the oil into the pan and heat it to 70% heat. Put the pork ribs in the pan until golden yellow (use high heat, not too long to avoid the meat getting hard). Leave the base oil. Put the rock sugar and boil it, add the broth of steamed pork ribs (keep the heat low, don't burn the sugar, add it from the edge of the pan when adding the soup), soy sauce, vinegar, salt, add the pork ribs and cook for a few minutes. When the soup is thick, drop a few drops of vinegar and stir it on sesame seeds. This dish can be made hot or cold dishes.sweet and sour pork ribs Make Tips
Q: Why does it need to be steamed first? Can't I just fry it directly?
A: If you steam it until tender and then fry it briefly, it will be crispy on the outside and tender on the inside. If you fry it directly, the meat will be dry.
Q: Why add a few drops of vinegar at the end?
A: Some of the vinegar evaporates during the cooking process, so adding a few drops at the end is to make the vinegar flavor rich :)
