Prepare corn starch, oysters, eggs, and leeks.

Mix corn starch and water with salt in a ratio of 1:1, beat eggs with salt, chop leeks, and wash oysters for later use.

Put the oil in the pan and heat it up, add the oysters and fry until slightly shrunk and smaller.

Pour in the mixed water and starch.

When the starch turns translucent, sprinkle with shredded leeks.

Immediately pour the egg liquid from the outside to the center.

Turn the heat to medium and low, and when the egg cake can slide freely in the pan, slowly pour it into the plate.

Return the egg cake upside down to the pan, slowly fry the other side, and remove from the pan.
