Steps for Braised chicken wings

Wash the chicken wings, cut twice, add salt and cooking wine, marinate, and then blanch with water.2
Break all seasonings (except spring onions) into the stainless steel seasoning eggs used for stew.3
Put one or two sugar into the oil pan, stir-fry until the sugar melts-bubbles-the foam subsides--the sugar turns golden, and add the washed chicken wings. Stir fry over medium heat until each chicken wing turns a beautiful golden color.4
Put in some hot water (never put in cold water, because the meat skin will shrink when the already heated meat piece suddenly becomes cold and it will not be easy to cook or taste). Just water enough to drown the chicken wings.5
Add the seasoning egg and onion slices, 1 teaspoon of soy sauce, and 1 teaspoon of salt. (Don't put too much soy sauce, because the sugar color is enough, and too much soy sauce will cover the aroma of the chicken wings themselves.) Use medium heat to stew the chicken wings until they are done, and when the soup becomes thinner, change to high heat to condense the juice, so as not to dry the pan.
