Wash the duck meat and cut it into pieces, mix well with rice wine, soy sauce, salt, and onions and ginger for one night (preferably more than 3 hours); take out the cured duck meat and drain the water for later use, and keep the cured meat seasoning sauce.2
Put the oil in the pan and heat it up, saute the dried peppers and pepper, stir fry the duck meat, add sugar and a little soy sauce, stir fry well, add bacon sauce and beer.3
Bring to a boil over high heat, simmer over medium heat until the soup is thick, turn to high heat to collect the juice.
