stir-fried dough
In the early years of the Republic of China, there was a noodle shop called Guangfuguan at Hufangqiao, Xuanwu District, Beijing. Due to its small profits, the food was ordinary and its business was very sluggish. One day, they only bought ten kilograms of yelao noodles and sold them for a day. When the door closed, they still had five to six kilograms left, and the mother and daughter named Mu, who were running the restaurant, were worried when they suddenly thought of an idea. She leveled the chopping board, took the remaining yelao noodles and rubbed them again, then pulled them into small pimples slightly larger than the pimples dice, put them into a boiling water pot to cook, fish them out and spread them in the shade. That night, the mother and daughter used these cooked dough bumps and added some green vegetables to stir-fry them. Unexpectedly, the taste was particularly good. While eating, they discussed and decided to add this new pasta dish to the original variety, and named it "stir-fried pimple".

Steps for stir-fried dough

Cut carrots and cucumbers into diced green beans (or soybeans), soak and cook for later use.

Cut the pork into diced slices and set aside.

Mix dough into a hard dough and leave for 30 minutes.

Roll it into a 0.5cm thick dough sheet.

Cut a 0.5cm wide strip.

Cut the long strip into 0.5cm square cubes (dough bumps).

Cut dough.

Boil in the water and remove it for later use.

Put the oil in a frying pan and heat it up. Add in the diced pork, green onion and ginger.

Stir the meat well, add diced carrots and green beans and stir fry.

Add soy sauce and appropriate amount of salt.

Add in the cooked dough dough, stir fry well, add diced cucumber and minced garlic before taking out of the pan.
