Traditional stir-fried pork uses pork belly to stir-fry. My family doesn't like to eat greasy and hard meat, so I choose tenderloin to make it. If you want to eat tender and smooth fried pork, you must first handle the slices of meat, which must be starched and marinated. Those who like spicy food can add chili sauce when sautéing the scallions and ginger until fragrant; it will taste better. You do not need to add salt when stir-frying, as salt was added during marination.
