I like to eat eggplant. My favorite way to eat it is braised, but it is too oily. I can eat it occasionally. Try it with sweet flour sauce. It tastes really good!

Steps for roasted eggplant in soy sauce

Prepare the ingredients.

Cut the eggplant into long strips and soak in clear water with a little salt for about 15 minutes.

Minced onions, ginger and garlic for later use.

Heat the pan and drain the oil.

Cut into strips and drain the water, put into a pan and fry until tender, remove and set aside.

Wash the pan, add oil, and saute chives, ginger and minced garlic.

Add sweet flour paste and stir-fry until fragrant.

Pour in the cooking wine and add appropriate amount of water.

Add the tomato strips, soy sauce, sugar, and a little salt to bring to a boil.

Turn to low heat and simmer until fragrant, add appropriate amount of water starch to thicken.
