Indulge in the perfect harmony of earthy matcha and sweet red bean paste with these delicate pastries. Here’s a simple recipe to create them at home.
Ingredients:
For the dough: 150g all-purpose flour, 30g matcha powder, 50g sugar, 70g cold butter, 1 egg, and 2-3 tbsp ice water.
For the filling: 200g store-bought or homemade red bean paste.
Instructions:
1. Prepare the dough: Mix flour, matcha powder, and sugar. Add cold butter (cut into cubes) and rub until it resembles breadcrumbs. Beat the egg, add it to the mixture, and knead with ice water until a smooth dough forms. Wrap in plastic wrap and chill for 30 minutes.
2. Shape the pastries: Roll the dough into a 1cm thick sheet. Cut into 5cm circles. Place a teaspoon of red bean paste in the center of each circle. Fold the dough over to form a semicircle and seal the edges by pressing with a fork.
3. Bake: Preheat the oven to 180°C (350°F). Place the pastries on a baking sheet lined with parchment paper. Brush with a thin layer of egg wash for a glossy finish. Bake for 20-25 minutes until golden.
Serving Tip: Enjoy these pastries warm with a cup of green tea for an authentic Japanese tea experience. Store leftovers in an airtight container for up to 3 days.
