Ingredients:
500g pork belly (cut into 2cm cubes), 3-4 fresh water bamboos (peeled and sliced diagonally), 3-5 tbsp sugar, 2 tbsp soy sauce, 1 tbsp dark soy sauce, 1 slice of ginger, 2 cloves of garlic, 1 star anise, cooking wine, and vegetable oil.
Steps:
1. Prepare the pork: Boil pork cubes in boiling water with cooking wine for 3 minutes to remove impurities. Drain and set aside.
2. Make caramel: Heat oil in a wok, add sugar and low-heat until it melts into a golden caramel.
