- 2 live medium-sized mitten crabs

- 1 bunch fresh perilla (leaves and stems)

- 3 slices ginger

- 1 scallion (cut into sections)

- 1 tbsp light soy sauce

- 1 tsp Shaoxing wine (optional)

- Sesame oil for drizzling

Steps:

1. Prepare the Crabs: Scrub the crabs under cold water to remove dirt. Use a knife to crack each crab into 4 pieces, keeping the claws intact. This helps the flavors penetrate while keeping the meat intact.
