Scallion cheese scones are a delightful treat, perfect for breakfast or afternoon tea. Here’s a simple, step-by-step guide to baking these savory pastries at home.
Ingredients:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- 50g cold butter, cubed
- ½ cup shredded cheddar cheese
- 3-4 chopped scallions (green parts only)
- 1 large egg
- ½ cup milk
Instructions:
1. Preheat & Prep: Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
2. Mix Dry Ingredients: In a bowl, whisk flour, baking powder, and salt. Add cold butter and rub with fingertips until the mixture resembles breadcrumbs.
3. Add Cheese & Scallions: Stir in cheddar cheese and chopped scallions.
4. Combine Wet Ingredients: In a separate bowl, beat the egg, then mix in milk. Pour into the dry ingredients and stir until just combined—do not overmix.
5. Shape & Bake: Turn the dough onto a floured surface, knead gently, and pat into a 2cm-thick circle. Cut into wedges or rounds and place on the baking sheet. Bake for 15-18 minutes until golden.
Serve warm with butter or clotted cream. These scones are best enjoyed fresh on the day they’re made!
