Ingredients: You’ll need 250g all-purpose flour, 120g cold unsalted butter (cut into cubes), 2 tablespoons sugar, 1 teaspoon salt, 1 egg yolk, 4-5 tablespoons ice water, and 2 tablespoons high-quality matcha powder.
Steps:
1. Make the dough: In a bowl, mix flour, sugar, and salt. Add the cold butter and rub with fingertips until it resembles breadcrumbs. Add the egg yolk and ice water, knead gently into a smooth dough. Wrap in plastic and chill for 30 minutes.
2. Prepare the matcha layer: In a small bowl, mix matcha powder with 1 tablespoon of water to form a thick paste.
