How to Make Bamboo Shoot and Duck Soup

Bamboo shoot and duck soup, a classic Chinese comfort dish, is beloved for its rich umami and tender ingredients. Here’s a simple guide to prepare this nourishing meal.

Ingredients: 1 whole duck (about 1.5 kg), 200g dried bamboo shoots, 10 dried red dates, 5 slices of ginger, 3 scallions, 1 tbsp cooking wine, salt to taste. Soak dried bamboo shoots in water for 4–6 hours until soft, then slice them. Rinse the duck, blanch it in boiling water with ginger and wine to remove impurities, then drain.

Steps:

1. Heat a pot over medium flame, add the duck and stir-fry until golden. Pour in 2L of water, bring to a boil, then reduce heat to a simmer.

2. Add soaked bamboo shoots, red dates, and ginger. Cook uncovered for 1.5 hours, skimming off foam occasionally.

3. When the duck is tender, season with salt, garnish with chopped scallions, and serve hot.
