Steps for Dried bamboo shoots and old duck casserole

The dried bamboo shoots are the ones marinated with Lei bamboo shoots salt. The water needs to be changed halfway, soaked and cut into small pieces. This bamboo shoot is the most authentic for making duck pot.

Handle the ducks clean, because they are dirt ducks and they have been cleaned very cleanly, so there is no need to pass through water.3
Pat the ginger with a knife, peel the garlic, tie the green onions into knots, slice the ham, and set aside.

Put the duck into the inner container of the pressure cooker, add a bottle of beer, ginger and garlic, star anise, ham slices, and a little white vinegar, put it in the pressure cooker and press for 15 minutes.

Take out the duck and put it in a large casserole, or use a soup jar like mine. Spread the mushrooms, fungus, and lotus seeds on the bottom. Put in the duck, add dried bamboo shoots, red dates, onion knots, appropriate amount of salt, and a little sugar.
