Steamed rice cakes, or *nuomi xiaogao*, are soft, chewy, and subtly sweet treats loved across Asia. Made from glutinous rice flour, they’re easy to prepare at home with minimal ingredients. Here’s a basic recipe to get you started.
Ingredients:
- 1 cup glutinous rice flour
- ¼ cup rice flour (for lighter texture)
- ½ cup sugar (adjust to taste)
- 1 cup warm water or milk
- 1 tsp vanilla extract
- A pinch of salt
Instructions:
1. Mix Dry Ingredients: In a bowl, combine glutinous rice flour, rice flour, sugar, and salt. Whisk evenly.
2. Add Wet Ingredients: Pour in warm water/milk and vanilla extract. Stir until a smooth, thick batter forms (no lumps).
3. Rest the Batter: Let it sit for 20 minutes to allow the flours to hydrate.
4. Steam: Pour the batter into greased molds or small bowls. Fill each ¾ full. Steam over high heat for 15–20 minutes until a toothpick comes out clean.
5. Serve: Cool slightly, then top with dried fruits, nuts, or a drizzle of honey. Enjoy warm or at room temperature!
Variations: Add matcha powder for color, mashed taro for flavor, or replace sugar with brown sugar for a richer taste. These cakes are versatile, gluten-free (if using certified rice flour), and perfect for breakfast or dessert. Happy steaming!
