How to Make Hawthorn Preserves: A Simple Guide

Hawthorn preserves, or hawthorn cakes, are a beloved sweet treat with a tangy-sweet flavor. Here’s a step-by-step guide to making them at home.

First, prepare 500g fresh hawthorns. Wash them thoroughly, remove stems and seeds, then cut into halves. Soak in salted water for 10 minutes to eliminate bitterness, rinse, and pat dry.

Next, cook the hawthorns: Add them to a pot with 300g sugar and 200ml water. Simmer over medium heat, stirring occasionally, until the fruit softens and the syrup thickens (about 20–30 minutes). For extra flavor, a pinch of cinnamon or lemon zest can be added.

Once the mixture thickens, remove from heat. Use a spoon to mash the hawthorns slightly for a chunky texture, or blend for a smoother consistency. Let it cool completely.

Finally, shape the preserves: Wet your hands to prevent sticking, then roll the mixture into small balls or flatten into discs. Optionally, coat them with sugar or sesame seeds for extra crunch. Air-dry for 1–2 hours, or refrigerate until firm.

Store in an airtight container for up to two weeks. Enjoy these homemade preserves as a snack, dessert topping, or gift!
