Ingredients:

1.5 lbs boneless, skinless chicken thighs, cubed; 1 tbsp Shaoxing wine; 1 tsp soy sauce; 1 egg white; 2 tbsp cornstarch; 2 dried red chilies; 1 tbsp ginger, julienned; 3 garlic cloves, minced; 1 green onion, chopped; 1 tsp sesame oil; 1.5 tbsp light soy sauce; 1 tsp dark soy sauce; 1 tsp sugar; 5 tbsp vegetable oil; Salt to taste.

Steps:

1. Marinate the Chicken: In a bowl, mix chicken with Shaoxing wine, light soy sauce, egg white, and cornstarch. Let sit for 20 minutes to tenderize.

2. Prepare the Sauce: Combine light/dark soy sauce, sugar, and 2 tbsp water. Set aside.

3. Stir-fry: Heat oil in a wok over medium-high. Add marinated chicken and stir-fry until golden (3–4 mins). Remove and set aside.

4. Aromatics: In the same wok, stir-fry dried chilies, ginger, and garlic until fragrant (30 secs).

5. Combine: Return chicken to the wok. Pour in the sauce, toss to coat, and cook until glossy. Add green onions, drizzle with sesame oil, and season with salt.
