Mutton pilaf, a beloved Central Asian dish, combines tender meat, fragrant rice, and caramelized vegetables for a hearty meal. Here’s a simple yet authentic method to recreate it at home.
Ingredients: 500g mutton (cut into small cubes), 2 cups basmati rice, 1 large onion (sliced), 2 carrots (julienned), 3 tbsp cooking oil, 2 tsp cumin seeds, 1 tsp ground coriander, salt to taste, and 4 cups hot water.
Steps:
1. Prepare the meat: Sear mutton cubes in a heavy-bottomed pot with oil over medium-high heat until browned. Remove and set aside.
2. Sauté aromatics: In the same pot, fry onions until golden, then add carrots and cumin. Cook for 5 minutes until carrots soften.
3. Combine and cook: Return mutton to the pot, add coriander and salt, stir well. Pour in hot water, bring to a boil, then reduce heat to low. Simmer covered for 30 minutes until meat is tender.
4. Add rice: Drain rice (if pre-soaked for 30 minutes), spread it evenly over the meat. Do not stir. Cover and cook on low heat for 20-25 minutes until rice absorbs all liquid.
5. Rest and serve: Turn off heat and let it rest for 10 minutes. Fluff gently with a fork and serve hot with a side of yogurt or fresh salad.
This method ensures each grain of rice is infused with flavor, while the meat remains succulent. Enjoy this comforting dish with family and friends!
