Korean BBQ mainly consists of beef, with sirloin, steak, tongue, and beef brisket, as well as seafood and sashimi, all being delicious choices for Korean barbecue. Among these, grilled sirloin and grilled steak are the most famous for their fresh, tender, and succulent texture. The way of eating Korean BBQ is different from Chinese and Brazilian barbecue. It's quite special: the meat is eaten wrapped in lettuce or perilla leaves. Typically, you spread a lettuce leaf in your hand, or you can layer perilla leaves, then add a piece of grilled meat, some chili, a dab of sauce, and optionally, some kimchi and rice. Finally, gather the leaves and wrap them into a bundle to eat. The crispness of the lettuce or perilla leaves combined with the rich aroma of the grilled meat and condiments creates a delightful experience. This is why Korean BBQ is so popular.
The correct way to enjoy Korean BBQ
Method 1
Ingredients: 300g beef. Marinade A: 1 tablespoon sugar, 2 tablespoons clear rice wine, 1/4 pear. Marinade B: 2 tablespoons Korean soy sauce, 1 tablespoon chopped green onion, 2 teaspoons minced garlic, 1 teaspoon sesame oil, 1 tablespoon sesame seeds. An appropriate amount of vegetables (lettuce, sesame leaves, green chili, chives, etc.). 1 plate of duck intestine, 5 skewers of pork ribs, 6 skewers of chicken skin, half a green onion. Sauce C: 1/2 teaspoon chili powder, 1/2 teaspoon sesame oil, 1/5 teaspoon salt. 3 cloves of garlic.
Dipping Sauce: 2 tablespoons soybean paste, 1/2 tablespoon chili paste, 1/2 teaspoon minced garlic, Gwajang chili paste (or similar), 1/2 teaspoon sugar, 1/2 tablespoon chopped green onion, 1 teaspoon sesame oil, 1 tablespoon sesame seeds. Mix these together.
Method 2
1. Cut the beef into appropriate-sized pieces and let it marinate for about an hour for the flavors to penetrate;
2. Wash the vegetables and drain the excess water. Slice the garlic thinly. Cut the green onion into 7 cm lengths and 3 mm thick pieces, soak in cold water, drain, and place in a bowl;
3. Mix the beef with Marinade B. Using your hands to mix helps the marinade penetrate better;
4. (1) Preheat the griddle, then place the beef short ribs on to grill. Traditionally, Korean BBQ uses beef short ribs, which are bone-in cuts from the sides of the chest and are known for their tenderness;
(2) Beef short ribs are long and can be difficult to grill, so usually, the staff will do it for you. Remember to ask them to flip the meat to ensure even cooking;
(3) When the meat changes color, use专用 beef shears to cut it into bite-sized pieces. Any leftover meat can be stacked on the remaining bones to prevent it from burning;
5. On a leaf of your choice, place the grilled meat, chopped green onions, garlic slices, and dipping sauce to eat. Enjoy the meat broth at the same time.
Method 3
Ingredients: 500g thin-sliced beef (or hot pot beef slices), 100g soaked shiitake mushrooms, 1/2 onion, 1/2 green onion.
Marinade: 1/2 cup soy sauce (adjust to taste), 1.5 tablespoons minced garlic, 1 teaspoon ginger juice, 1 teaspoon white pepper, 2 tablespoons sugar, 1 tablespoon sesame oil, 1 tablespoon white sesame seeds.
Instructions
1. Drain any excess blood from the beef slices. Cut the mushrooms and onion into wide strips. Slice the green onion diagonally;
2. Mix all the marinade ingredients in a large bowl;
3. Add the beef slices, onion strips, mushroom strips, and green onion slices to the mixed marinade and toss well. Marinate for 10 minutes to let the flavors infuse;
4. Heat a flat-bottomed frying pan over high heat. Add the marinated beef and vegetables and stir-fry until cooked through. Serve immediately.
