Three-Shredded Salad
Vegetable and Tofu Skin Rolls
Ingredients: 3 sheets of tofu skin, 300g of bok choy, some dried tofu, some boiled mushrooms, a little salt, light vegetable oil, and MSG.
Instructions
1. Wash the bok choy, blanch it in boiling water, drain, and chop. Trim the edges of the tofu skin and cut each sheet into four equal parts. Also, blanch the mushrooms and dried tofu in boiling water, then remove and shred them.
2. Place the bok choy, mushrooms, and dried tofu in a large bowl. Add a little salt, a bit of light vegetable oil, and MSG, and mix well to make the filling.
3. Unfold the tofu skin sheets. Place an appropriate amount of the vegetable filling onto each sheet (including the edges), then roll them up and place them on a plate. Steam in a steamer over high heat for about 5 minutes, then remove and serve.
Three-Shredded Salad
Ingredients: 100g of cooked pork elbow, 75g of cooked chicken, 50g of egg pancake, 150g of cucumber or bok choy heart, 25g of dried shrimp. Garlic paste, soy sauce, vinegar, sesame oil, and MSG to taste.
Instructions
1. Shred the pork elbow, chicken, egg pancake, and cucumber, and place them all on a plate. Sprinkle the dried shrimp on top.
2. Mix the soy sauce, vinegar, garlic paste, MSG, and sesame oil together. Pour the mixture over the ingredients and toss well before serving.
Bracken Fern and Shredded Chicken Stir-fry
Ingredients: 200g of bracken fern, 100g of chicken breast, 15g of cornstarch. Fine salt, MSG, cooking wine, soy sauce, chopped green onions, and chopped ginger to taste.
Instructions
1. Wash the bracken fern, blanch it in boiling water, soak in water for 30 minutes, then remove and cut into 2cm long pieces for later use.
2. Shred the chicken breast. Place it in a bowl and add salt, MSG, and cornstarch, mixing well. Heat salad oil in a wok over high heat (about 70% hot), add the chicken and stir-fry until cooked. Remove and drain the excess oil.
3. Heat the wok again with a small amount of salad oil. Add green onions, ginger, cooking wine, and soy sauce to fragrance the wok. Add the shredded chicken and bracken fern, and stir-fry for a moment until done.
