How to make Char Siu

Ingredients: 750g pork neck or loin, Lee Kum Kee Char Siu sauce. (Simple, right?)

1. Wash the pork and cut it into 2-3 cm thick slices and place in a container.

2. Add 2 large tablespoons of Lee Kum Kee Char Siu sauce to the meat and mix well.

3. Place the marinated meat in a food bag and refrigerate for at least 24 hours. Take it out to massage it a few times during the period. It must be marinated long enough, as the meat is thick and won't absorb the flavor otherwise.

4. Place the marinated meat on a baking tray, on the middle rack of the oven. Bake at 200°C for about 15 minutes per side. Adjust the time and temperature according to your oven. Keep a close eye on it, and brush the meat with the sauce from the bag during baking.

If you're afraid the meat will dry out, you can loosely cover it with aluminum foil for the first 15 minutes, then remove the foil, brush both sides with the sauce, and increase the heat to get a nice color.

The result is charred on the outside, tender on the inside, and deliciously juicy. The texture is simply amazing.
