I. Method
Ingredients for Steamed Lion's Head:
Main ingredients: 400g Pork (with fat and lean), 250g Soybean sprouts
Side ingredients: 50g Bamboo shoots, 50g Cornstarch, 50g Egg
Seasonings: 20g Ginger, 2g White pepper, 8g Salt, 20g Cooking wine, 3g Plant oil
1. Mince the pork finely, place it in a small basin, add refined salt, water, cooking wine, egg, ginger, white pepper, wet starch, etc., and stir vigorously until it is thick and does not release water.
2. Form 4 large, flat, round meatballs and place them in a bowl greased with plant oil.
3. Wash the bamboo shoots, chop them finely, and sprinkle them on top of the meatballs.
4. Steam the meatballs in a steamer over high heat until cooked, then remove them.
5. In another pot, add broth (500g) and blanch the soybean sprouts until cooked.
6. Season with refined salt and MSG, then pour into the bowl with the Lion's Head and serve.
II. Little Tips - Food Incompatibility:
Egg: Eating with goose meat can damage the spleen and stomach; eating with rabbit meat or persimmons can cause diarrhea. It is also not advisable to eat with soft-shelled turtle, carp, soy milk, or tea at the same time.
