Leftover rice makes the best fried rice, and here's how to make it!

Many people love fried rice, but can you make it? Don't be fooled by its simplicity; it's actually one of the most difficult dishes in the culinary world. So, how can you make delicious fried rice? Let me teach you!

1. Egg Fried Rice

Ingredients: leftover rice, cucumber, ham sausage, farm-fresh eggs, salt, black pepper powder.

Instructions:

1. Dice the cucumber and ham sausage finely. Chop the scallions into small pieces.

2. Beat the eggs into a liquid, then add the rice and mix well (the amount of rice in my photo is for a family of three, and I used 3 eggs).

3. Heat an appropriate amount of oil in a wok over medium heat. Pour in the rice that has been soaked in the egg mixture and stir constantly with chopsticks until the grains are separate.

4. Add the diced ham and cucumber, and stir-fry evenly.

5. Add a little salt, black pepper powder, and chopped scallions. Stir-fry evenly and then turn off the heat.

2. Soy Sauce Fried Rice

Ingredients: leftover rice, scallions, eggs, soy sauce, cooking wine, oyster sauce, sugar.

Instructions:

1. In a bowl, mix a bowl of leftover rice with 2 tablespoons of soy sauce, a little cooking wine, and sugar. Add a little oil and mix well.

2. Heat a wok, add oil, and pour in the beaten eggs. Scramble the eggs until cooked, then remove and set aside.

3. Add a little more oil to the wok, sauté the scallions until fragrant, then add the leftover rice and red bell pepper, stir-frying evenly. Return the scrambled eggs to the wok. Finally, add a little oyster sauce and stir well before serving.

3. Shitake Mushroom and Pork Fried Rice

Ingredients: 3 dried shitake mushrooms, a small piece of pork belly, one bowl of rice, a handful of dried shrimp, 2 scallions, 2 slices of ginger. Seasonings: 1 tablespoon of cooking wine, 2 teaspoons of light soy sauce, 1 teaspoon of dark soy sauce, 0.5 teaspoon of sugar.

Instructions:

1. Prepare the ingredients: wash and drain the dried shrimp, wash the scallions and cut into sections and chopped greens, slice the ginger.

2. Dice the pork belly into small pieces.

3. Soak the dried shitake mushrooms in warm water until soft. Save the soaking liquid.

4. Dice the soaked shitake mushrooms.

5. In a small bowl, combine 1 tablespoon of cooking wine, 2 teaspoons of light soy sauce, 1 teaspoon of dark soy sauce, and 0.5 teaspoon of sugar. Add 3 tablespoons of the mushroom soaking liquid to make a sauce.

6. Heat oil in a wok over low heat. Sauté the scallion sections and ginger until fragrant, then remove and discard them.

7. Add the diced pork belly and stir-fry over medium heat until it changes color and releases its oil.

8. Add the diced shitake mushrooms and dried shrimp, and stir-fry for one minute.

9. Pour in the sauce prepared in step 5.

10. Simmer over medium heat until only a little liquid remains in the wok.

11. Add a bowl of rice.

12. Turn the heat to high and stir-fry continuously until the rice and all ingredients are well combined and the grains are dry. Garnish with chopped scallions and serve.
