According to a report in the UK's Daily Mail on April 22, a new study announced at the Boston annual meeting of the American Society for Biochemistry and Molecular Biology has found that mushrooms are also an important source of vitamin D. Sun-drying fresh mushrooms (such as oyster mushrooms, shiitake mushrooms, king oyster mushrooms, etc.) before eating them can be as effective as vitamin D supplements in supplementing vitamin D. The research report was published in the latest issue of the Journal of Steroid Biochemistry and Molecular Biology.

The report states that vitamin D not only enhances the body's absorption of calcium, helping to maintain healthy bones and teeth, but also boosts the immune system. In the new 12-week study, scientists at Boston University School of Medicine randomly divided 30 adult participants into two groups: one group took a daily supplement containing 2000 international units of vitamin D, while the other group consumed sun-dried mushroom powder. The results showed that there was almost no difference in the final vitamin D levels between the two groups of participants.

Dr. Michael Holick, the lead researcher of the new study, stated that the results indicate that eating sun-dried mushrooms is just as effective as taking vitamin D supplements. The mechanism is similar to human skin; under the exposure of ultraviolet sunlight, mushrooms can produce vitamin D, and they can continue to do so even after being harvested. This research also suggests that the vitamin D content in dried mushrooms, after being sun-dried, is higher than that in freshly picked mushrooms.

Researchers recommend that after buying fresh mushrooms, open the packaging and place them in the sun for 1 hour, with the optimal time being between 10 AM and 3 PM in the spring and summer seasons. After the mushrooms have been sun-dried, cook and consume them, and the vitamin D will not easily be lost.
