Steps for shredded cabbage

Tear the cabbage into small pieces by hand. (Hand-shredded cabbage is more delicious when fried than when cut with a knife. When frying green leafy vegetables such as Chinese cabbage and rapeseed, you can tear them by hand.)

Take a small bowl and pour appropriate amount of soy sauce, vinegar, sugar, salt, chicken essence, and sesame oil.

When the oil in the wok is heated to 5 minutes, add the pepper, ginger, and garlic cloves and stir-fry until fragrant.

Pour the seasoning in the bowl into the pan.

Pour in the cabbage and stir fry, add salt, and chicken essence (don't add anything you don't like). Note that you can't fry it too hard. Just cook it at 7 points. If you fry it too hard, it will not be crispy and tender. The residual temperature of the dish can make the dish more cooked, so my experience is that it can only be done at 7 points.

The cabbage should not be stir-fried until it is overcooked; seven-tenths cooked is enough. If it is fried for too long, it will lose its crispness. The residual heat will continue to cook it slightly, so in my experience, seven-tenths cooked is perfect.
