Ever since I saw Brother Lao Yang's fragrant three rolls, I have been salivating. I wanted to try it the next day, but I couldn't finish the things at hand. Yesterday, I finally took some time off to cultivate my busy mood in the kitchen: )

Steps for Huaibei Special Fragrant Three Volumes

Make up the noodles first and let it wake up. Prepare for making steamed buns.

Wash mushrooms and bean sprouts for later use.

Tear small pieces of gluten and blanch them in water.

Prepare onions, ginger, and coriander roots.

Take a small bowl and make seasoning. Add two tablespoons of Pi County bean paste, one spoon each of shrimp skin, sesame seeds, and cumin powder, and one spoon of chopped pepper.

Pour oil into the pan (just a little more than usual for stir-frying) and heat up the chives, ginger and coriander roots.

Pour the seasoning from the small bowl into the pan and turn to low heat to stir fry the red oil.

Add cold water to the pan, add vegetables, add ham sausage and eggs, cover the lid and bring to a boil, add salt and appropriate amount of chicken essence, turn to low heat and simmer, simmer for one to two hours until the flavor is in.

While simmering, my face was almost awake and I could start making steamed buns. Take another stove, boil water in a steamer, and tear the dough into small doses.

Cover the lid, don't turn off the heat, continue rolling the second cake, and place it into the steamer again after rolling it.
