Xi noodles are also called 'warm noodles'. They are a delicacy made of soaking thin noodles or soba noodles in hot miso soup and adding vegetables. From the past, on festive and special days such as birthdays or banquets, noodles must be used to entertain guests. Eating noodles on birthdays means living as long as noodles, while eating noodles at weddings means looking forward to the long-term union of the bride and groom.

Steps for Korean Xi Mian

    Dry the beef with a cotton cloth with the blood, clean the head and wash it. Put the beef and water in the pan, and cook over high heat for about 10 minutes. When it boils, turn to medium heat and simmer for another 40 minutes, add the beef head and cook for about 20 minutes. Remove the beef and cut it into pieces 4cm long, 1cm wide and 0.3cm thick. Filter the broth with cotton cloth. Peel the pumpkin first and cut it into 5 cm long, then cut it into wide. Place the silk (77g) about 0.4cm thick, marinate with salt for about 10 minutes, and then dry with a cotton cloth. Divide the eggs into egg whites and egg yolks, beat and fry them into egg skins, and cut them into 4cm long and wide. Silk about 0.2 cm thick.

Rinse the cooked noodles with water, drain off the water with a sieve.

    Pour the broth into the pan and cook over high heat for about 5 minutes. When it boils, add the clear sauce and salt to taste and cook to make miso soup.     You can also soak the cooked noodles in the broth before using them. You can cut the beef into thin strips, stir-fry it with seasonings to use as a topping, or add roasted seaweed.
