    Use fresh pork and place it in the freezer for about 10 minutes, as this makes it easier to slice into strips. If you prefer a richer taste, choose a cut of pork belly with more fat. If you prefer meat with less fat, you can use pork elbow that isn't very fatty. I used a mix of both pork belly and elbow meat, because if the meat is too lean, the rice won't turn out as flavorful.
