I don't know how to cook eggplant. The only eggplant I eat is eggplant gravy. It tastes good with noodles. Every time I do this, I think of my father who passed away. Before my father died of serious illness, he wanted to eat eggplant gravy noodles most. I miss my father and I miss you very much.

Steps for Homemade eggplant gravy

Peel the eggplant and cut it into dices. Set aside.

Cut the pork belly into diced meat. Since there is no pork belly, I switched to something else. It's best to bring some fat meat to fry it more fragrant. I am used to sprinkling some dry starch on the meat when cooking meat dishes. The advantage is that the meat is tender and does not absorb oil. The downside is that it is easy to crack. Cut the green onions, ginger and sour foam for later use.
