Put the ginger peel and pork ribs together into a clear water pot. After boiling, continue to cook for three or four minutes. Pick up the pork ribs and drain them. Pour away the water and ginger peel.2
Put the blanched pork ribs and ginger slices into a casserole pot, add enough water, and the water should not exceed the pork ribs and be slightly 1cm higher (add enough at one time); after boiling, cover and turn to low heat, simmer for about 1 hour.3
Peel the lotus root, cut into hob pieces, put into the soup pot, and continue to simmer for 1 hour.4
When the meat is rotten, add appropriate amount of salt, turn to medium heat, boil and cook for about 10 minutes, and sprinkle with chopped green onion.
