Steps for beef jerky

1
The thickness of beef slices should be decided by yourself. The thickness should be fried for a longer time and should not be mastered.
2
Break the dry red peppers into small pieces, slice the scallion white, and cut the ginger into slices.
3
Take a small bowl, pour in light soy sauce, soy sauce, cooking wine, salt, and sugar to make juice. (Soy sauce: light soy sauce: cooking wine 3:2:3).
4
Pour the chopped beef slices into a bowl and soak them in water for an hour to fully remove the blood and the fishy smell of the meat.
5
After soaking, pour out the blood and squeeze out the water from the beef slices. I squeezed them with my hands. After squeezing dry, add chopped green onions and ginger, cooking wine, and a small amount of salt, and marinate for 30 minutes.
6
Pour the oil into the pan, add the pepper and pepper when it is 50% hot, and stir fry until fragrant.
7
Reduce heat to low heat, add in the marinated beef slices and stir fry.
8
A lot of water will come out during the frying process, and this water has to be poured out.
9
Continue to stir-fry over low heat and be sure to fry the water dry. This step is critical!
10
After frying the beef slices dry, pour the prepared seasoning juice into the pan and continue to stir until there is no soup.
11
Sprinkle in cooked sesame seeds, or add some cumin if you like.
12
Serve with wine and dishes. You can eat it as a snack. The dry red peppers at home are very spicy. Add some peppers and you can call them spicy beef jerky.
