Crispy roasted pork is one of the most traditional roasted meats in Guangdong. The pig skin is crispy and the pork is fragrant and glutinous.

Steps for Crispy roasted pork

Cut pork belly with skin into large pieces of 15 × 15 cm for one meal. Put cold water into the pan, add green onion, ginger slices, and 2 tablespoons of cooking wine. After boiling, skim off the floating foam, cook for 8 minutes, stick it with a toothpick, and remove it without blood.

Soak the cooked pork in cold water immediately or rinse it in cold water.

Use a kitchen paper towel to soak up overcooled pork. Be sure to drain it dry. Use a toothpick to puncture some holes, the denser the better, and not too hard, otherwise the final product will not be crispy. Remember to be dense.

Add 1/4 teaspoon of salt to the pig skin and spread evenly. Then add baking soda with 1/4 of the salt and spread evenly. Don't add too much baking soda, otherwise it will be bitter. If you add less, the pork skin will not be crispy. I used my fingertips to dip it about 3 times, and it was less than 2 g.

Take a piece of tin foil, coat it with salad oil, and wrap it with the marinated pork to expose only the pig skin. You can wrap it in several more layers, but the layer close to the pork must be brushed with oil. Lay tin foil on the baking sheet.

Bake in the oven at high heat for 30 minutes. Or preheat to 250 degrees and bake for 30 minutes. It's okay to see that the pig skin turns yellow and slightly scorched.

Scrape the black charred part of the pig skin clean with a knife. Then brush the pork skin with salad oil, bake at high temperature for 5 minutes, brush with another layer of oil, and bake for another 3-5 minutes.
