Steamed sturgeon with black bean sauce
A few days ago, I encountered a special price on sturgeon fish when I was in the supermarket. A chef in the fish department was very cute and worked hard to promote the fish. There were not many people visiting the supermarket that day. The chef was a little free and could chat with customers. An aunt bought three strips at once. The master taught me several methods, and I benefited a lot, so I also bought one to try it. The fish is really delicious, and the fish bones in the middle are all transparent cartilage.

Steps for Steamed sturgeon with black bean sauce

1
Rinse the sturgeon arowana, marinate with cooking wine and salt for 15-20 minutes, and rinse again. (Processing the fish this way will not smell fishy.)
2
Shred ginger and small green onions.
3
Put half of the shredded ginger and onion on the bottom of the plate. (I used the largest plate in the house.)
4
Mix the garlic fermented bean paste with sugar, spread evenly on the fish, drain on a plate, and sprinkle with the remaining shredded ginger and onion.
5
Put water in the pan to boil, steam the fish for 10 minutes, quickly sprinkle with the remaining chopped green onion, and simmer for another 2 minutes.
