Steps for Braised pig's feet with soybeans

Soak soybeans in cold water for 3 hours in advance. Bring to a boil in a cold water pot, add the pig's trotters and blanch them, remove and rinse them well, and drain the water.

Heat a pan to cool the oil, add the rock sugar, and simmer over low heat until the rock sugar melts. Pour in the trotters and stir fry until the sugar color adheres to the trotters.

Add onions, ginger, star anise, cinnamon, white carom, tsao and dried peppers and stir-fry for a few times. Add cooking wine, soy sauce, soy sauce and Meiji fresh soy sauce to boil.

Add the soybeans and stir fry a few times.

Pour in appropriate amount of boiling water, bring to a boil over high heat, and then turn to low heat and simmer for 1.5 hours.

No salt was used in this dish. 1 tablespoon of soy sauce was used, 4 tablespoons of soy sauce and 1 tablespoon of Meiji fresh soy sauce were used. It feels just right when I eat it. It becomes salty when I add salt. However, it still depends on personal taste.
