Cut the pineapple in half with a knife. Use a knife to cut along the four sides of the pineapple without cutting the outer skin at the bottom of the pineapple. Then use a knife to cut the pineapple core into small pieces, which will make it easier to remove the pineapple core. Keep the pineapple cup.2
Cut the pineapple core into 1 cm square dices, place it in a bowl, add 1/2 teaspoon of salt (3 grams), pour in water, soak for 30 minutes, and drain for later use.3
Wash the peas, chop the shallots, and cut the red peppers into slices. Beat the eggs into a bowl, stir in the cooking wine and a little water and beat them up.4
Pour the oil into the pan and heat it over high heat. When the oil is 80% hot, pour in the egg liquid and quickly stir it with a shovel. Serve after the eggs are cooked.5
Pour the oil into the pan again, heat it to 70% heat over high heat, add the shredded shallots, peas and red peppers, and stir fry for 1 minute. Add the rice, gently crush the rice with a shovel, add the scrambled eggs and drained diced pineapple, add soy sauce and the remaining 1/2 teaspoon of salt, stir well, add American almonds and raisins, stir fry a few more times.6
Pour the fried rice into a pineapple cup.
