Wash the squid, remove the surface film, and cut it into shreds. Shred green pepper and onion, ginger, and spring onion.2
Marinate the washed squid with salt, boil a pot of water, and put a few slices of ginger and onion. After the water boils, add the squid and quickly blanch it to remove the fishy smell (you can also add some cooking wine). Don't blanch it for too long, and remove it when it changes color., rinse it with running water, and drain it for later use.3
Put oil in the pan, heat it, add green onion, ginger and dried peppers and saute until fragrant. Add shredded squid, add 2 tablespoons of Korean chili sauce, and stir fry well. Add 1 spoonful of white sugar and 1 spoonful of chicken essence, and stir-fry quickly.4
