Chop the ribs into small pieces, blanch them in water before cleaning them.2
Wash the soybean sprouts and place them in a saucepan with the ribs. Add appropriate amount of water (preferably not to add water halfway) and ginger slices, boil over high heat, and turn to low heat to cook.3
Cook for about 1 hour and the ribs and soybean sprouts will be soft and the soup will be rich. At this time, turn off the fire and pick up the ginger slices, add salt and cooking wine, sprinkle with green onions and serve.
